The ORAC Value Of Foods And Why It Matters

Years ago I heard the term ORAC in relation to health and I didn’t think much of it because at the time I wasn’t ready to get too deep into something new. I revisited it several years later and dug deeper into the science and realized the importance and significance of it at that point. Now, it’s a big deal to me and I loo for opportunities to include high (ideally, the highest) ORAC foods in my diet as what they do is pivotal for health and wellbeing.

The ORAC acronym is simply (Oxygen Radical Absorbance Capacity), ORAC value, or ORAC score is a method developed by scientists at the National Institute of Health and Aging (NIH) to measures the antioxidant capacity of different foods.

In other words. The higher the ORAC score the more potent the antioxidant. The lower the ORAC score the lower the antioxidant capacity. The body utilizes ORAC antioxidants for dealing with the stress of free radicals. It does this by donating a paired electron, as shown below. What Are Free Radicals?

Free radicals are unstable molecules that can build up in cells which cause damage to other molecules, such as lipids, proteins and DNA.

Oxidative stress is an imbalance of free radicals in the body that can be caused by ROS (reactive oxygen species) which contribute to oxidative stress. Remember, oxidative stress is caused by free radical damage, ROS (reactive oxygen species) is a type of free radical. Which then leads to oxidative stress as you can see below.

All of these factors ranging from infections, to pollutants, radiation and inflammation lead to damage of DNA, oxidation of lipids (fats) and protein oxidation. This means that the protein, fat and DNA of the body is damaged by free radicals in the form of ROS, a specific type of free radical.

This all leads to oxidative stress, which then creates more inflammatory markers in the body which then leads to inflammation related conditions. This can range from cancer, to arthritis and much more. Interestingly enough the free radical damage leads to pro-inflammatory markers which then triggers inflammation again, leading to more damage. This can become a vicious cycle of the body being damaging and then continuously damaging itself. Oxidative stress in any form takes a normal cell, and puts it under attack by free radicals, which then causes oxidative stress. If the body had enough ORAC foods, the normal cell wouldn’t be damaged by free radicals. It would stay healthy, as shown on the left below.
